Abstract. The restaurant industry occupies a special place among consumer market segments, characterized by high operational intensity, complex supply chain structure, and chronic vulnerability to fraudulent threats. It is precisely this combination of factors that determines the relevance of the search for preventive, rather than reactive, risk management tools — those that allow for the prevention of fraud before it becomes active. The subject of this study is the internal inventory control system of a restaurant enterprise, as it relates to interactions with external counterparties — warehouse lessors and consumable suppliers. Business relationships in this segment are associated with a systematic risk of unfair partnerships: shell companies, encumbered real estate, price gouging, and procurement kickbacks form a persistent spectrum of threats, causing significant financial damage to enterprises with inherently low operating margins. According to estimates by the Association of Certified Fraud Examiners (ACFE), the average organization loses approximately 5 % of its annual revenue due to illegal activities, while the duration of the implemented scheme before detection is approximately twelve months. The goal of this study is to develop a conceptual model for integrating open source intelligence (OSINT) methodology into the internal inventory control procedures of a restaurant enterprise. The authors analyzed typical industry fraud schemes, systematized available OSINT tools for business verification tasks, and proposed an original five-step methodology for counterparty verification. The methodology encompasses five sequential stages: initial identification and registration verification, analysis of judicial and enforcement history, reputation monitoring in open sources, geoinformation verification of the actual location of real estate, and research into affiliations and ultimate beneficiaries.
